Unlike the recipe I did not cut them in half first and wrap them in foil.
About a year ago I did an experiment. I made up baked potatoes in the different ways. foil, foil oil wiped with pin holes, and no foil. I wanted to see what truly would be the best way to do it. AND to make sure I wasn't influencing the decision hubby did the blind taste test. We both agree that the non foil method was by far superior. So all our baked potatoes are now done with no foil on them (unless we do them in the fire and then they ALWAYS have foil). :)
While the potatoes were baking for an hour in a 450 oven my sweet hubby seasoned up the meat. He put in worchestershire sauce, red pepper seasoning mix, black pepper, salt, seven tablespoons of marina sauce, no salt seasoning from Costco. My lad added about 1/2 an onion clarified in butter.
After the meat simmered for a while I added 1/2 can of corn and some frozen peas.
When the potatoes were done I scooped out most of the innards. Thtey were a tad warm, hence the hotpad. :) I mashed up the innards with some garlic salt and a wee bit of milk (not much).
Hubby mentioned I should have added more milk to the potatoes to make them more malleable, but hey.. it worked ... just not all nice and neat. :)
We served it along with applesauce and pudding (my son's desire to have SOMETHING that he really liked as part of the meal). :)
