2 1/2 c. flour
1 1/2 c white sugar
1 c. chopped Pecans (I didn't add these)
1/2 c quick cooking oats
1 tbsp baking powder
1 tsp salt
1 tsp ground cinnamon
4 eggs
3/4 c shredded zucchini (I put in 1 cup)
I also added one diced apple
3/4 c oil
Directions:
1. preheat over to 400
2. in mixing bowl, combine first seven ingredients. Beat eggs, combining with zucchini (and apple) and oil. Pour over dry ingrdients stirring only until moistened. Batter will be lumpy.
3. Fill greased muffin cups 3/4 full. Bake for 25 minutes or until inserted toothpick comes out clean. Cool on wire rack.
