Slice up some potatoes, do thin fairly even slices. you'll need about four cups (though I ended up with about 6 cups and then just adapted the amounts). Set them in cold water to prevent blackening. Mix together 3 tbsp flour, 1 tsp salt, 1 dash cayenne pepper (if you don't like cayenne just do regular black pepper). That's what I did.
Next melt 3 tablespoons butter in a round fry pan. Add flour mixture when melted. Keep stirring. While stirring slowly add 1.5 cups of milk.
Once that is well mixed and somewhat thick, slowly add in your cheese. The recipe calls for 1 cup grated sharp cheddar cheese. I used a cheese blend I already had that my family likes. Melt that in until the mixture is smooth on a low burner. Let sit warm until you use it.
Take a casserole dish, layer half the thinned sliced potatoes on the bottom, add half the cheese sauce, then add the remaining potatoes, add the remaining sauce. Sprinkle with 1/2 cup of grated cheese.
If you like, top with some paprika for color. (I'm not keen on paprika so I passed on this step).
Bake uncovered for about 1 hour at 350°F.
