2 medium zucchini
1 cup vegetable oil (we do 1/2 oil and 1/2 applesauce)
2 tsp vanilla
3 cup flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
OPTIONAL 1/2 cup raisins and 1/2 cup chipped nuts (we never add these)
preheat oven to 325 F
Wash, remove most of peel and grate zucchini. You should end up with about 2.5 cups of grated zucchini.
Beat eggs until frothy, add oil, sugar, vanilla and zucchini. Mix well.
Stir all dry ingredients together. Add optional ingredients if desired.
Stir in the wet ingredients until well blended.
Pour batter into greased loaf pans. Bake for 1 hr 15 minutes or until skewer comes out clean.
NOTE: we thoroughly enjoyed this recipe that our student put together. :) He did a good job with it. :) It is very light tasting. And it fairly durable, somehow it got put in at 250 rather than at 350, the oven got shut off twice and yet it came out just lovely. :) Very nice quick bread recipe.
